General Manager – Nightcap (Edinburgh)
£40,000 salary + £5,000 Year 1 completion bonus
Full-time, 48 hours per week
Nightcap is Edinburgh’s late-night cocktail bar, serving until 3am. We’re about to expand with a refurbishment that adds a second bar and almost doubles capacity. To lead us through this next stage, we’re looking for a General Manager who can balance late-night leadership with genuine creative authority.
We’re approaching this role a little differently. Running a late-night bar is demanding, and we’ve seen how managers often burn out after a year. So we’re trying a new approach: offering the role in12-month creative cycles.
That gives you a year with the reins to:
•Put your stamp on Nightcap’s menus and culture.
•Lead a team in one of the city’s toughest late-night environments.
•Play a central role in the Collective’s wider direction.
At the 9-month point, we’ll sit down together. If you’re still energised and keen to carry on, we’ll look at rolling into Year 2 with an updated package. If not, the cycle resets with a new GM and a fresh creative vision. It’s designed to keep the role sharp, sustainable, and rewarding.
The package:
•Year 1: £40,000 salary + one-off £5,000 completion bonus.
•9-month check-in: not a probation, but a chance to decide whether you want to continue into another cycle.
•Year 2 onwards (if renewed): £40,000 salary + monthly bonus of 1% of turnover (subject to performance).
•Up to 40 days holiday (28 standard, up to 12 performance-based).
•Staff perks and discounts across all Tiny Cup Collective venues.
•Ongoing training and development, with opportunities across the group.
