LOVE RUM, GIN TEQUILA, MEZCAL & ALL THINGS FUN! The Forgotten Cask has a Cocktail Bar Manager opening! We are a rum focused, pirate loving, Caribbean themed rooftop cocktail bar perched above the Cauliflower Hotel. We are looking for a strong candidate to step in & help lead our team & join the family to make this role their own. Strong spirit, cocktail, beer & wine knowledge are a must, with past experience in leadership roles, booking and event co-ordination.

The role:

Be a direct support to our General Manager and work in line with our management team. Assist in leading and developing a strong and well established FOH and BOH team.

Manage the day to day operations ensuring that the level of customer service is consistently in line with our brand standards.

Maintain an exceptional level of service and delivery of our cocktail and wine lists. Have a confident level of knowledge in wines/spirits/cocktails and be able to contribute to the development of our beverage offering.

Help our established bar team push boundaries and introduce new ideas to our beverage program.

Manage & assist in all incoming inquiries and booking

- Function & event management
- Maintain operations within budgetary requirements.
- Attend our weekly management meetings, contribute agenda points by sharing issues and observations.
- Involvement in recruitment, training and development as well as on the job performance management.
- Motivate and inspire our team to achieve great results.

Required skills & attributes:

- Have held a similar managerial position in a cocktail driven venue for a minimum of 12 months.
- Ability to lead, manage, motivate, and develop staff
- Experience in booking functions, events and co-ordinating with all team members including the event.
- Proven success driving revenue and profits
- Knowledge of quality food & beverage products
- Knowledge of liquor licensing laws and venue compliance obligations, specifically RSA control.
- Experience with management reporting, stock control, OHS & handling venue security concerns
- Strong organisational skills with the ability to think on your feet and multi-task. Self motivated, makes use of check lists and communication methods to manage own workload and give regular updates.
- A strong understating of BOH & FOH systems
- Excellent interpersonal and communication skills with the ability to delegate effectively
- Prepared to work flexible hours for 5 shifts including nights and weekends.
- A passion for hospitality, leading from the front and developing relationships across all levels of the business

Our bar is strongly spirit focused, with a concentration on Caribbean & Martinique Rum's we are the show case bar for the Chairman's reserve & Clement Rhum's brands we also have a selection of over 100 rums – over the years we branched out into Gin's, Tequilas and Mezcals as reflected in our seasonal cocktail lists.
