Hello, I'm Merill.



I truly believe that some people are born to be part of hospitality. It takes a personality type to understand that industry. I have been part of that for almost 10 years now. My first experience was in a five star restaurant/hotel in Norway. I rearly worked during daytime or with actual visitors but rather with the chef’s and waitresses doing all the odd jobs. The respect for the people, creating the atmosphere that brought new and old visitors back to this middle of nowhere place, is something i will always carry with me. My journey then took me to Amsterdam where I worked in a tiny bar, where i had to teach myself everything and anything about well.. first how to pour a beer and everything that follows. That was the first place where I understood that i created the atmosphere, a place my customers want to spend time, know more about the city and myself. After that I went back to my roots and went home to Estonia, where I started working in a tex-mex restaurant that was the complete opposite to Estonia. The style of customer service that I developed there is something I value the most out of all my former experiences. There’s are no customers, there’s visitors who are coming to your home. They need to feel welcomed, safe and taken care of but in the end they play by your rules.
